OBJECTIVES


• To offer new products to progress from a purely Emmental cheese maker to a semi-generalist cheese maker.
• To sustain and develop certain existing expert cheese-making techniques.

STRATEGY


• To forge partnerships with companies that can offer different expert cheese-making techniques but cannot themselves handle launching, quality monitoring, traceability, R&D, and marketing…
• The companies we aim to work with are small and medium-sized businesses or cooperatives, which enjoy AOC status or have industrial facilities that we could take advantage of. Development of a new range of soft cheeses with washed or natural rind is one example.

Focus on our partners: ABONCOURT, FLUMET, MILLERET and ROUSSEY

ABONCOURT


This dairy cooperative in Haute-Saône specialises in natural and washed rind soft cheeses and enables us to offer our customers certain soft cheese products.
This partnership led to a joint venture "TERROIR DE HAUTE SAÔNE", which specialises in AOC* Gruyère.

FLUMET


This Savoie-based cooperative specialising in Reblochon is situated in Val d’Arly and processes 5 million litres of AOC* milk. It makes 25% of its turnover on the local market and transfers the rest of its production to ENTREMONT ALLIANCE.

New cheeses

MILLERET


This family business, situated in Haute-Saône, specialises in soft cheeses. A new Emmental Grand Cru and Organic facility was set up in partnership with the company.

ROUSSEY


Situated on the outskirts of the Vosges département, this company processes 12 million litres of milk to produce Munster and other organic soft cheeses. Thanks to this partnership, ENTREMONT ALLIANCE has access to a manufacturing plant for these markets.
