Pursuant to European regulations on heat treatment of milk, all our cooked pressed cheese products are "cooked" in vats at 50°C for 20 minutes. This step is followed by acidification and a long maturation process. Thanks to this specific process, our cheeses are among the safest on the market in terms of food safety.
At ENTREMONT ALLIANCE, the health safety of our products is also guaranteed by application of a stringent "hygiene base" in all our cheese dairies, as well as risk prevention studies and an analytical test plan, which represents several hundreds of thousands of tests per year.
